Euralis, the world leader in the delicacy made from the livers of force-fed geese and ducks, hopes to profit from the exotic tastes of wealthy Chinese. Michel Depierre, director-general of Euralis, said: " It's the very beginnings of the market. " The new venture will initially produce only 25 tonnes of foie gras from ducks fed by local Chinese under the supervision of French staff. " It is a market that will develop in hotels and restaurants, " Mr Depierre said. " There is a percentage of the population that has a lot of money.
