She has lived in " cool " places (opposed to my not cool places, hehe) during her 35 years, and last night she introduced me to something I was really hesitant about. I am not a fan of cooked carrots, but when she mentioned carrot dogs for our dinner, I was intrigued. We gave our daughters veggie dogs, the husbands had bratwursts, and she and I ate better than them all. The carrot was cleaned and sliced in half lengthwise. She put them in a skillet to soften it just a tiny bit for ease of eating. It was browned some on the sides and still kind of firm in the center. We put it on a whole wheat hot dog bun with homemade bean chili and sprinkled cheddar cheese on top. Could have added diced onions YumYumYumYum! Hungry now (smelling someone's recipe of applesauce carrot cake in my oven! Can't wait for it) I thought carrot dogs were good to use as a whole food instead of the processed veggie dogs, and it got me to open my mind a bit on cooked carrots. P.S. My Mom used to do this when we were kids only she caramelized the carrot a little on the outside and we ate it with horseradish in a bun and sometimes saurkraut on the side or a cabbage salad. How cool! I would love to see her chili recipe posted. I forgot all about carrot dogs. Donna I've been smiling lately, dreaming about the world as one.
