Carrot dog

A close friend of mine has been vegetarian/vegan on and off all her life. She

has lived in " cool " places (opposed to my not cool places, hehe) during her 35

years, and last night she introduced me to something I was really hesitant

about. I am not a fan of cooked carrots, but when she mentioned carrot dogs for

our dinner, I was intrigued. We gave our daughters veggie dogs, the husbands

had bratwursts, and she and I ate better than them all.

The carrot was cleaned and sliced in half lengthwise. She put them in a skillet

to soften it just a tiny bit for ease of eating. It was browned some on the

sides and still kind of firm in the center.

We put it on a whole wheat hot dog bun with homemade bean chili and sprinkled

cheddar cheese on top. Could have added diced onions ;)

YumYumYumYum! Hungry now (smelling someone's recipe of applesauce carrot cake

in my oven! Can't wait for it)

I thought carrot dogs were good to use as a whole food instead of the processed

veggie dogs, and it got me to open my mind a bit on cooked carrots.

P.S. As soon as I get her chili recipe, I will post it.

I can't believe I read this.  My Mom used to do this when we were kids only she

caramelized the carrot a little on the outside and we ate it with horseradish in

a bun and sometimes saurkraut on the side or a cabbage salad.

How cool!  I would love to see her chili recipe posted.

I forgot all about carrot dogs.

Glad this brought back memories for you :) It is something I will keep in my

back pocket for a Saturday lunch idea that is easy.

I will email her now for the chili recipe, as I usually use the canned veg chili

and this was AMAZINGly better :)
