We used to have this often during the summer, quick meal and you can change it

all around.

I will be making it soon.

Happy evening,

Donna

I've been smiling lately, dreaming about the world as one.

And I believe it could be someday, it's going to come.

Glad this brought back memories for you :) It is something I will keep in my

back pocket for a Saturday lunch idea that is easy.

I will email her now for the chili recipe, as I usually use the canned veg chili

and this was AMAZINGly better :)

I can't believe I read this. My Mom used to do this when we were kids only

she caramelized the carrot a little on the outside and we ate it with

horseradish in a bun and sometimes saurkraut on the side or a cabbage salad.

How cool! I would love to see her chili recipe posted.

A close friend of mine has been vegetarian/vegan on and off all her life. She

has lived in " cool " places (opposed to my not cool places, hehe) during her 35

years, and last night she introduced me to something I was really hesitant

about. I am not a fan of cooked carrots, but when she mentioned carrot dogs for

our dinner, I was intrigued. We gave our daughters veggie dogs, the husbands had

bratwursts, and she and I ate better than them all.

The carrot was cleaned and sliced in half lengthwise. She put them in a

skillet to soften it just a tiny bit for ease of eating. It was browned some on

the sides and still kind of firm in the center.

We put it on a whole wheat hot dog bun with homemade bean chili and sprinkled

cheddar cheese on top. Could have added diced onions ;)

YumYumYumYum! Hungry now (smelling someone's recipe of applesauce carrot cake

in my oven! Can't wait for it)

I thought carrot dogs were good to use as a whole food instead of the

processed veggie dogs, and it got me to open my mind a bit on cooked carrots.

P.S. As soon as I get her chili recipe, I will post it.

She would steam them until almost tender and them let them saute in butter or

marg and a little brown sugar on low in a skillet until they would caramelize a

little on the outside of the carrot.

We put veggie chili, cheddar cheez, sourkrowt (sp?) would probably be good, too.

Excellent!!!  I don't like veggie dogs, but I *love* carrots. Next time we " do "

dogs, I'll try this.

I wonder if this would work on the grill???

do you also do the caramelizing of the carrot beforehand for this way, or do you

just steam it?

really? With the caramelizing with the butter and brown sugar ahead of time?

interesting.

I love horseradish, I am going to give this a try. My daughter hates hotdogs,

loves carrots, but .... she will not like horseradish. I wonder if she could use

ketchup on it ..... sounds gross, but ...

You need to cook them until tender but still firm. Get a grill pan, it will

work. I found 2 great grill pans at linen N' Things. I grill all veggies in

I don't like veggie dogs either. I used to really enjoy the Quorn brand of

hotdogs, but they were discontinued due to lack of sales. Grrr, even my omnivore

daughter, who will never eat a " real " hotdog would eat the Quorn ones. I wrote

the company begging them to make them again, but for some reason, they don't

want to lose a ton of money for me........ hmmmph!

Oh yeah. My grill pan is my friend. Last year for my birthday, DH bought me a

$750 BBQ. Then, I went all vegetarian on him!  :)

So, now when I'm grilling up his food, I make myself this incredible grilled

veggie sandwich.  I make this kick a$$ BBQ sauce (which I will give you the

recipe this weekend) and, MAN, slurp slurp.

That's why I am so glad to have found this group. I am a *major* foodie, but

only became a vegetarian in February. I went through the " processed food " phase,

but am over that. Now I am committed to becoming as good a vegetarian cook as I

was before...

Nice to meet you all!
