I rarely post. . .I am more of a lurker (thank you all for your amazing recipes!), but am writing to request a favor today, I've been a group member for 2 years now. This isn't spam A friend of mine Jeffrey, recently submitted a recipe to the 92nd Street Y, for their Mega Bites Recipe Challenge. His recipe for Pan-Roasted Potatoes and Onions was selected as one of twenty-five finalists for " fan favorite, " and it's deliciously vegetarian. Here is his recipe if you could try it and cast a vote. Pan-Roasted Potatoes and Onions: Jeffrey from Lyndhurst, NJ “Good hearty food that tastes good, no set recipe (got that from my maternal grandmother from the old country).” Ingredients: Vidalia Onions Red Bliss Potatoes Olive Oil Garlic Paprika Sea Salt Citrus Pepper Cashew pieces Cooking Instructions: Sauté onions in olive oil, garlic, paprika, sea salt, citrus pepper. Cut potatoes into various shapes. When onions are translucent, add potatoes. Stir until onions are caramelized and potatoes are seared on the outside and soft in the middle. Roast cashew pieces in oven. Serving / Presentation: Spoon into serving dish and sprinkle roasted cashews on top. Savor.
