freezing salsa

I am getting buried in tomatoes from the organic farm CSA. I don't want

to can anything because it's just too hot (96 here today). I've been

making up big batches of spaghetti sauce or tomato sauce and freezing

it in freezer bags and stack them up. I've made 2 quart jars full of

salsa already. I'm afraid it will go bad if I make anymore for the

fridge. Is it possible to make up some salsa and freeze it?

 

I harvested some ground cherries this weekend and my 7 yo dd and I

hulled them all. I made up a batch of freezer jam out of the ground

cherries-yummy! I had never even heard of ground cherries before. My

mom hasn't heard of them in over 60 years. I love the freezer jams

because I don't even have to turn on the stove.

I did this last year and it worked out great! (cooked salsa rather than fresh

salsa). I made

one batch to taste italian, one salsa (mexican style cooked) and one indian

tomato curry.

Ok, I had a lot of tomatoes....this year just enough for eating. Where is your

CSA farm?
