Guest guest Posted August 26, 2008 Report Share Posted August 26, 2008 Mixed Vegetable Stew for Two 2 cups chopped mixed vegetables, potatoes, carrots, cauliflower, french beans, and green bell peppers 1 medium onion sliced 2 garlic cloves crushed 2 tablespoons oil 2 whole green cardamoms 2 whole cloves 1/2 " cinnamon stick 1 green chilli, sliced 1 teaspoon ginger cut into strips (juliennes) 1/2 teaspoon black peppercorns coarsely crushed 1 cup coconut milk, canned unsweetened 1 cup water a few curry leaves or some cilantro sprigs salt to taste Heat the oil in a pan on medium level till it is hot. Add the green cardamoms, cloves , garlic, and cinnamon. Fry for a few seconds. Now add the green chilli(es), ginger and the sliced onions. Saute on medium heat for 1 minute(s) or till the onions are transparent and soft. Add the mixed vegetables, curry leaves or cilantro sprigs , salt and water. Cover and cook on low heat for 10 minutes or till the vegetables are cooked.. Add the peppercorns and the coconut milk.
