freezing tomatoes

A while back someone was mentioning that she froze her fresh tomatoes

rather than canning or drying them to keep.

I have got a tomato crop that just won't quit and all my canning jars

are full.

I could use some specific instructions on how it is done.

Katie I have tried so many ways to preserve tomatoes! placing them

directly on zip lock bags with their skins on is the best IMO because

they maintain their integrity best after thawed and work great in

sauces. Also, very little work! just wash and bag. The skins slip

right off after they are thawed. Lucky you! you will be enjoying

these in the winter, we did last year.

I have frozen whole tomatoes in the past. My mother got me started freezing

tomatoes because it is so much faster and not as hot. You dip the tomatoes in

boiling water for 1 to 2 minutes....drop them in a boiling water bath (this is

called blanching) and then you slip the skins and core....cut out any bad

spots.....put then in 2 cup amounts in ziplock freezer bags. You can use them

in any cooked dish. Personally, I prefer canned tomatoes but when you have

tons of tomatoes, freezing them works fine.

I just whirred them up in a blender and put them in freezer containers.

Took up less room. We didn't plant any tomatoes this year. Didn't want to

try and get someone to take care of them while we were gone. It would only

have been a few plants but still a bother.
