Guest guest Posted August 27, 2008 Report Share Posted August 27, 2008 Whole Wheat Pasta with Pine Nuts 1 lb. whole wheat spaghetti 1/2 cup sun dried tomatoes 1 cup finely chopped plum tomatoes 1 1 1/2 cups parmesan cheese or 1/2 cup ground almonds mixed with 1/2 cup nutritional yeast 1 cup pine nuts, optional 1 tsp. canola or sunflower oil, optional salt and pepper to taste Cook pasta in boiling water to which 1 tsp canola or sunflower oil has been added. Drain well. Place the pasta in a pan (over a burner that is warm but not on). Add all the ingredients and toss well. Serve immediately. Serves 6 to 8.
