Yummy Recipe for Vegetarian Paella

This is a good recipe I found on the Foodnetwork a while back ago, and made a

few changes to it.  I've made it several times and it's really good.  It may

look like a long list, but it's actually a quick to make hearty recipe that can

serve about 4 people or have for leftovers.  Enjoy!

Vegetarian Paella

Ingredients:

- 2 tsp. olive oil

- 8 oz. soy sausage (I use Soy-riso, found @Safeway)

- 2 cloves of garlic

- 1 cup marinated artichoke hearts, quartered

- 1 cup sliced yellow squash

- 1 cup of of  sliced ,sm. size, zucchini

- 1 cup of carrots ( I use baby carrots)

- 8oz. of mushrooms (white or baby bella is good)

- 1/2 cup frozen green peas

- 14 oz. can of diced tomatoes

- 6-8 saffron threads (can be hard to find and/or expensive, but can left out,

found cheaper at Trader Joe's)

- 1/2 tsp. of paprika

- 2 Bay leaves

- 2 cups of cooked rice ( I heat up frozen organic brown rice from Trader Joe's,

only takes 3 min. to make)

- 1/2 cup of vegetable broth

- Salt and pepper ( I use a Salt Substitute and Lemon-pepper seasoning), as much

as suits your taste 

-Optional:  top w/ crumbled or shreaded cheese of your choice (soy or dairy)

Directions:

1.  Heat oil in large pan or skillet over medium-high heat.

2.  Add soy sausage and garlic, cook for about 2 minutes. 

3.  Add artichokes, squash, zucchini, carrots, mushrooms, peas, tomatoes,

saffron, paprika, and bay leaves.

4.  Bring to a simmer and cook for 5 minutes.

5.  Add rice and broth and cook for about 5 minutes, or until liquid is

absorbed.

6.  Remove from heat and then take out bay leaves.

7.  Season to taste w/ salt and pepper.  Top w/ cheese if desired.
