Guest guest Posted August 28, 2008 Report Share Posted August 28, 2008 Italian Roma Tomato Sauce 6 Roma tomatoes, cut into quarters ( I leave skin on) 2 3 oz. cans tomato paste 1/3 cup red wine such as cabernet sauvignon 2 teaspoons olive oil 3 cloves fresh garlic, crushed 2 tablespoons fresh chopped basil or 1 tablespoon dried 1 teaspoon fresh chopped oregano or 1/2 teaspoon dried 1 cup broth 1 teaspoon salt Puree Roma tomatoes, tomato paste and wine in a food processor or blender until smooth. Heat olive oil in a 2 quart sauce pan over Medium heat. Sauté garlic, basil and oregano for 1 minute. Add pureed tomato mixture, broth and salt to sauce pan. Bring to a boil. Reduce heat to low and simmer for 10 to 20 minutes. Serves 4. Toss with your favorite pasta.
