Guest guest
This recipe was published on the news latter for our farmers market and I just have to share. It is deliscious and is easy. Even little kids ask for more. It is great as a side dish and any left overs will make a great tasting and healthy snack. 2 Pounds of broccoli 4 or more cloves of garlic, c oarsly chopped 1 teaspoon sea salt or kosher salt 2-3 tablespoons olive oil Preheat the over to 450 degrees. Peal the broccoli stalks, starting from the borrom, using a parng knife. The thick skin will peel away from the stalk easily. Then slice the stalks into coins less than 1/4 inch thick. Keep them separate from the florets. Cut the florets into bite size pieces. Coat two large baking sheet with non-stick spray or ol to make easier clean up. Toss the broccoli stalks with half the oil, half of the garlic and half of the salt in a bowl until evenly coated with oil. Spread the broccoli stalks out onto a sngle layer. Roast until the stalks are tender and beginning to brown, about 20 minutes. Toss the broccoli florets with the rest of the oil, garlic ans salt an roast them like the stalks until tender and beginning to nbbrown. That will take less time, about 12-15 minutes. Mix the broccoi after roasting and serve. Enjoy.
