Guest guest Posted August 31, 2008 Report Share Posted August 31, 2008 1 tblspn + 1 tsp canola oil 2 cloves Garlic 1/2 yellow onion, finely chopped = 1 cup 1 Tblspn Jalapeno,finely diced 2 -15oz -cans black beans 1/2 cup Oranje Juice 1/2 tsp Cumin 4 Corn Tortillas Salsa (Mild - Hot) 1 cup chopped Lettuce 1 diced Avocado 1 diced Tomato 4 Tbspn Sour Cream 4 Tblspn chopped Cilantro 1/3 cup shredded Monterey Jack Cheese (spicy optional) Heat 1 tsp oil in a saucepan over medium heat; add Garlic, Onion and Jalapeno. Saute 3 - 4 minutes, until Onions are soft. Add Beans, Orange Juice and Cumin, Simmer 3 - 4 minutes. Adjust seasoning to taste. Set Aside. Heat a cast iron skillet or saute pan over high heat. Crisp each tortilla in the pan using tblspn Canola Oil, about 1 minute on each side. Place tortillas on a paper towel until ready to serve.
