Guest guest Posted September 1, 2008 Report Share Posted September 1, 2008 Zucchini Pie A good way to use up those zucchini lurking in our gardens! 4 C. sliced zucchini (parboil a few minutes and drain) 1 c. diced onion 1/4 c. melted butter 1/2 c. fresh parsley, chopped 1/2 t. salt 1/2 t. pepper 1/4 t. each garlic powder, basil & oregano 2 eggs, well beaten 1 unbaked 9 inch pie crust 2 t. dijon mustard 8 oz. shredded mozzarella or muenster cheese Spread the mustard on the unbaked pie shell. Mix all the ingredients together and dump into the shell. Bake @ 375 degrees for 40 minutes or so. Done when knife inserted in center comes out clean.
