Guest guest Posted September 4, 2008 Report Share Posted September 4, 2008 Minted Bulgur Pilaf 3/4 cup bulgur {cracked wheat} 1/3 cup chopped onion 1 large garlic clove, minced 1/2 teaspoon ground cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon ground cardamom seed 1/8 teaspoon ground cloves 1/4 cup butter or margarine 1 10 1/2 oz. can condensed consomme 1 tablespoon lemon juice 1/2 cup carrots, finely chopped 1/3 cup golden raisins 1/2 cup chopped fresh mint leaves or 1 tablespoon dried mint leaves, crushed 1/2 cup chopped tomato Brown bulgur, onion, garlic and seasonings in butter in a saucepan until tender. Add consomme,, lemon juice, carrots, raisins and mint; bring to a boil. Reduce heat, cover and simmer 20 minutes, or until done, stirring occasionally. Stir in tomatoes; heat to serve. Serves 4.
