I made a homemade BBQ and want to make a grilled eggplant sandwich, but every time I grill it it tastes bitter and mushy. The coals are heating up, so a fast response would be appreciated! Guest guest Posted September 5, 2008 Report Share Posted September 5, 2008 Thanks for the tip! I have a charcoal BBQ/smoker. What I did was trim the skin off, and slice it into pieces. I seasoned with salt and pepper and let it sit for 10 minutes, and then added in some garlic and onion powder, as well as olive oil. (I was also grilling red pepper, mushrooms and onions) I put them on the grill on really low heat (I was making ribs for DHs birthday, so the temp was around 200) and turned occasionally for about 30-45 minutes. In the last 15 minutes, I basted with BBQ sauce, and then I served it over a soft hoagie roll. YUM!!! Also try grilling oranges, lemons and any other fruits to make iced tea or any other drinks!!
