I tried making it vegan last night with raisins and crushed pineapple and toasted coconut. Think I should've drained the pineapple, LOL. Anyway, it is so inexpensive and good -- but I am still looking for the best recipe, maybe low fat, too. Think Mom used mayo and only shredded carrots and raisins. Mom probably wouldn't remember now, as she is 92. Still has a good sense of humor but has forgotten a lot ... well, what's new, so do I! Put about 1/2 cup mayo in the bottom of bowl w/ alittle sugar to taste; salt & pepper to taste. Add a bag of shredded carrots and 1 can of drained chunked pineapple; add a handful of raisins. I grate a pile of carrots and add mayo, raisins, walnuts, and some pineapple bits. Now my sister grates carrots, uses Miracle Whip, Craisins, and a little grated broccoli stalks.
