Carrot Salad Recipes ?

Hi, I grew up eating this salad ... it had black raisins in it, too.  Yummy and

good for a body.  Anyone have a good recipe?  I tried making it vegan last night

with raisins and crushed pineapple and toasted coconut.  Think I should've

drained the pineapple, LOL.  Anyway, it is so inexpensive and good -- but I am

still looking for the best recipe, maybe low fat, too.  Think Mom used mayo and

only shredded carrots and raisins.  Mom probably wouldn't remember now, as she

is 92.  Still has a good sense of humor but has forgotten a lot ... well, what's

new, so do I!  LOL

Here's the carrot salad recipe I like--it's from " Joy of Cooking "

 

Carrot and Raisin Salad

Combine in a medium bowl:

4 large carrots, grated

1/2 cup coarsely chopped pecans or unsalted roasted peanuts

2 teaspoons grated lemon zest

1 Tablespoon fresh lemon juice

3/4 teaspoon salt

Ground black pepper to taste (I omit)

Pour over:

1 cup sour cream or ½ cup sour cream and ½ cup mayonnaise (I’m sure

that you could use 1 cup veggie mayo but I haven’t tried that)

Toss well and serve.

I saw a carrot salad made on the Food Network yesterday. Very

simple.......

 

Put about 1/2 cup mayo in the bottom of bowl w/ alittle sugar to taste;

salt & pepper to taste.

 

Add a bag of shredded carrots and 1 can of drained chunked pineapple;

add a handful of raisins.

 

Mix and enjoy.

So many different versions and yet all are easy. I grate a pile of

carrots and add mayo, raisins, walnuts, and some pineapple bits.

Now my sister grates carrots, uses Miracle Whip, Craisins, and a little

grated broccoli stalks.
