Guest guest Posted September 7, 2008 Report Share Posted September 7, 2008 Mushroom Millet Bake safflower oil for coating pan 1/2 cup minced green onion 1 teaspoon butter or safflower oil 1/3 cup dry sherry 1 cup thinly sliced mushrooms 1/4 cup minced celery 1 teaspoon minced garlic 2 cups cooked millet 3 tablespoons grated cheddar cheese Preheat oven to 350 degrees. Lightly oil an 8-inch-square baking pan or casserole dish. In a large skillet over medium-high heat, saute green onion in butter and sherry for 5 minutes. Add mushrooms, celery, and garlic, cover, and cook for 10 minutes. Add millet and cook, stirring frequently, to heat through (about 5 more minutes). Remove from heat and stir in cheese.
