Guest guest Posted September 8, 2008 Report Share Posted September 8, 2008 Here is a real easy, no pressure cooker needed, recipe for pickle a relish that is neither sweet nor dill, but very good. You can either grind or dice the vegetables. I diced mine as I like more texture in my relish. I used red and yellow sweet peppers to add color. 5 cups small diced cucumbers 3 cups small diced onion 3 cups chopped celery 2 cups small diced sweet peppers 3/4 cup salt 1 1/2 quarts water 1 quart white vinegar 3 cups sugar 2 teaspoons mustard seed 2 Tablespoons celery seed 2 teaspoons tumeric Combine vegetables. Add salt and water and let sit about 24 hours. Drain the vegetables. Heat vinegar, sugar, mustard seed, celery seed and tumeric in large pot. When it begins to boil add the drained vegetables and bring back to a boil. Turn down to medium low and continue to cook for 10 minutes. Seal in steralized jars. Makes 5 pints.
