Guest guest Posted September 8, 2008 Report Share Posted September 8, 2008 PUMPKIN MOUSSE PIE 3 oz. of. sugar free agar geletin or pectin 16 oz. pumpkin puree (2 cups) 1 cup boiling water 1 cup cold water 1 cup pineapple or orange juice 1 tsp. pumpkin pie spice 2 cups lite whipped topping or non dairy whip Dissolve Jello and pumpkin pie spice in boiling water. Add cold water, orange juice and pumpkin puree. (If using pineapple juice add it later with the cool whip, or it might not set up as it contains digestive type enzyme - Bromelain) Let stand in refrigerator until set. Blend in whipped topping. Refrigerate until ready to serve. Garnish slices with maraschino cherries or orange sections on top a dollop of non dairy whip. Vegan/Vegetarian: Alternative choices include Agar-Agar, which is derived from seaweed. Agar-Agar is sold in noodle-like strands, in powdered form or in long blocks. Other options are guar gum, xanthan gum, pectin, arrowroot powder, and kudzu powder. For Pie: Pour into 2 graham cracker crusts.
