If you use the green tomatoes in any recipe that calls for tomatillos, to make green salsa it will be good. It will not taste like tomatillos, but it will still taste good. Guest guest Posted September 10, 2008 Report Share Posted September 10, 2008 If there is any pink on them, green tomatoes will actually ripen-- sometimes they will even ripen without any pink. Put them in a bag with an apple, should hurry the process. Watch them to be sure they do not rot. Whatever you do, don't put them in the fridge. I like the subtle flavor of partially ripened tomatoes in certain kinds of vegetable/bean soups and Italian-style " stir fries " Kathleen We got green tomatoes in our coop box this week and a recipe for fried green tomatoes. Guest guest Posted September 10, 2008 Report Share Posted September 10, 2008 You can also ripen them by wrapping each one individually in a piece of newspaper and store in a cool, dry place. Make sure if you have a lot that they are not piled on top of one another but stored apart from on another. Hope this makes sense and helps!
