Guest guest Posted September 10, 2008 Report Share Posted September 10, 2008 Pasta With Mushroom-Zucchini Sauce 1 teaspoon olive oil 1 cup zucchini, cut in thin 1 " strips 1 cup mushrooms, sliced thin 1/2 cup white cheese 2/3 cup pasta, cooked 6 tablespoons parmesan cheese, grated Stir-fry veggies in oil 2 minutes. Lower heat and stir-fry one minutes longer till veggies begin to brown. Add white cheese. Cook 1/2 minute. Add pasta and heat. Sprinkle Parmesan on top before serving. Makes 1 to 2 servings.
