Gnocchi & Tomato Bake TNT

I made this for the family last Sunday and will definitely do it again, it

was so quick and easy to make and absolutely delicious.

Gnocchi & Tomato Bake

1 tablespoon olive oil

1 onion -- chopped

1 red pepper -- deseeded and finely chopped

1 clove garlic -- crushed

400 grams can chopped tomatoes

500 grams pack gnocchi

handful basil leaves -- torn

125 grams ball mozzarella -- torn into chunks

 

Heat grill to high. Heat oil in a large frying pan, then soften the onion

and pepper for five minutes. Stir in the garlic, fry for one minute, tip in

the tomatoes and gnocchi then bring to a simmer.

 

Bubble for ten to 15 minutes, stirring occasionally until the sauce has

thickened. Season, stir through the basil then transfer to a large,

ovenproof dish.

 

Scatter with the mozzarella then grill for five to six minutes until the

cheese is golden and bubbling.

NOTES : You can freeze this bake for up to a month - just defrost and bake

Carolyn's notes: I added a can of sweetcorn, and used two cans of tomatoes

as the first was so thick there was no sauce for the Gnocchi to cook in.
