I know what you mean about how hard it is to find unsweetened streded coconut. I usually stock up when I'm at the Village Market http://vm.southern.edu/ in Collegedale, TN across the street from Southern Adventist University or at the store at the Natural Health Food store at http://www.wildwoodhealth.org/site/c.ddKKISNmEkG/b.4089841/ in Wildwood, Ga I store it in my freezer. I I don't know if they have an online store or not. I would definitely try shredding the Coconut Chips(I love to munch on those) in your food processor, but I would only pulse it, checking it every couple of seconds, or you'll have powder very quickly.
