Guest guest Posted September 18, 2008 Report Share Posted September 18, 2008 I made this soup last weekend and it was a great hit. tomato soup 2-3 ribs of celery chopped 1 onion chopped 2 TBSP EVOO 2-3 TBSP flour 5-6 chopped tomatoes 1tsp salt pepper to taste 3-4c soy milk 5-7 fresh basil leaves saute onion and celery in olive oil until tender and transluscent, add flour until oil is absorbed and flour is lightly browned. Slowly add milk and bring to boil. Add tomatoes and boil for a few minutes. Add seasonings and basil. Trasfer soup to blender and puree. Return to pot and heat through. Serve.
