You didn't have to make a sauce or cook noodles. I tried it and it was wonderful. I would like to pass it along and hope everyone likes it as well as my husband and I did. GARDEN LASAGNA 2 Quarts of Vegetables: grated yellow squash, zucchini, sliced chard, green beans, cut up, mushrooms and red peppers, chopped. Must use ½ cup chopped onion, 3 cloves garlic, minced, and 2 large tomatoes, chopped. Combine in a large mixing bowl. Toss with the following: 1 tsp. fennel seed 1 Tbsp. dried basil 1 tsp. dried oregano 3 Tbsp. olive oil 3 Tbsp. balsamic vineagar 1 tsp. sugar ½ tsp. salt Freshly ground pepper Choose a cheese and add 2 cups of grated cheese to above mixture. Sharp white cheddar, feta, mozzarella, or Parmesan are good. Spray 9 x 11-inch baking pan and build layers, starting with uncooked lasagna noodles, ending with veggies. Make three layers of each. (You don't have to cook noodles, just make sure they are covered well with veggies.) Sprinkle top with more cheese. Bake at 350 degrees for about an hour till bubbly and noodles are done. I will get my weekly cheese and try this possibly this weekend. White cheddar sure sounds good with some feta.
