Courtesy of a book by Dr,Barnard Review of the book in another post. The recipe Roadhouse Hash 1 1/2 teaspoons of Olive Oil 1/2 cup of grated carrots 1/2 cup diced red and green peppers 1/2 cup thinly sliced scallions (very hard for me to find here in NE PA) 1/4 teaspoon of turmeric 1 pound of firm tofu crumbled ( I used cubed) 1 Cup of Kidney Beans or a can rinsed 2 Tablespoons of Nutritional Yeast ( I found this at Shop-rite) 2 tablespoons of parsley optional ( did not have any so I did not add this) Take a large skillet of Wok and heat oil first. Then basically add everything and mix it up. Cook for 5 to 10 minutes stirring continually. What I added was a large potato. I saw hash and thought potato so I cut one up. The potato in my opinion made the recipe. Basically I need my food to be super simple I don't want to spend a lot of time cooking during the week.
