Guest guest
Great recipe and did you know Popeye has been a vegetarian since 1929 ? LOL I have a sweatshirt with that on it and it sure does get positive comments from everyone Donna The seed is in bloom, will it meet an early doom or survive in a tranquil sea? Does it face an early end, will it find a real friend, should it be called humanity? Will creation of man bring death by his hand or will life be his destiny? Adjust to your taste. Wash the potatoes, peppers, and carrots and spinach. Peel the carrots. Slice everything to bite sized pieces and put in a bowl. Add in some crushed or chopped garlic into the bowl. Sprinkle in the herbs, salt, and pepper. Add in the spinach leaves and drizzle with olive oil. Mix everything together until all the vegetables are well coated with herbs and oil. Put all of this into a sprayed/oiled baking pan, in a thin enough layer so that everything is in one layer. Cover with foil and bake at 350 for 30 minutes. Take the foil off, and bake another 15 minutes or so, until all vegetables are soft and browned. Serve with catsup and maybe some wheat toast. YUM! PS: This is easy to prepare the night before (up until the baking step) so you can pop it in the oven while you're getting ready in the morning, and can have a home cooked breakfast any day of the week!
