As I was making it tonight I got a little more creative with it. Spinach and Quinoa Pie 2 boxes of frozen chopped spinach, thawed and squeezed 1 refrigerated pie crust 1 handful if diced onions (I would add more next time) 1 box of Seeds of Change brand Quinoa blend with rosemary 1 cup crumbled feta cheese Prepare quinoa as directed on box. Grease the casserole dish. At the end of the quinoa cooking, add the onion and cover for 5 minutes. Mix the spinach and cooked quinoa in the prepared bowl. Top with crumbled feta. Lay the pie crust on top and press down to be directly resting on the filling. I had some extra so I just made little fold all around. Bake at 450 for about 15 minutes or until golden crust.
