I would say green chili and cheese and I mean lots of good cheese in enchiladas with HOT salsa on the side. Or her tortilla soup. Pinto Beans, steam fried Okra, steam fried collards, cornbread and big glass of Orange Juice. We love most any kind of soup and eat it year around. One favorite is homemade " Chicken " noodle Potato Soup made with Fri-Chik(vegetarian meat substitute). My mom used to make this every friday for dinner along with homemade whole wheat bread and rolls. It is delicious and boy does the house smell good. My recipe is in the files under Hot Soups, in the Soup folder. We love to use the Fri-chik to made a " Chick'n and Rice Casserole " that is also a favorite here and the recipe is in the rice recipes in the grain folder. But this with a tossed salad and some fresh fruit and you'll have a feast. Another Vegetarian baked beans with some Vega-Links sliced up in them and some grilled cheese sandwiches. Mayfield Snow Cream is so good and far less calories. My daughter just brought me a bowl. Pumpkin pie with cool whip is one of my all time favorite desserts.
