I have been a gourmet cook for 20 years. But when I became a vegetarian, I needed to relearn a few things. This is a huge book (995 pages with the index). What I love about this is that it is a book about cooking, not just about vegetarian cooking. If you are new to vegetarianism, or just want to become a better chef, head on over to your local bookstore and check this one out. It's amazing.
