Guest guest Posted September 23, 2008 Report Share Posted September 23, 2008 This is my recipe that I've developed to take to family pitch-ins---I can eat it & they don't find any " weird " ingredients in it. I make it whenever I feel under the weather too. Talk about a million calories--lol! ANN'S MACARONI AND CHEESE 1 (16 ounce) package elbow macaroni 12 oz can evaporated milk 2 eggs (I use 1/2 cup egg substitute) 2 cups sour cream 2 teaspoons salt 3 cups shredded mild Cheddar cheese 2 cups cubed Velveeta 1 cup shredded Parmesan cheese 1. Preheat oven to 350 degrees. Spray 9x13 pan with nonstick cooking spray. 2. Bring a large pot of salted water to a boil. Add pasta and cook for 8 to 10 minutes; drain and rinse with cold water. 3. In a very large bowl, mix milk, eggs, sour cream, and salt. Stir in macaroni and then add Cheddar cheese and Velveeta. 4. Pour into pan. Sprinkle with Parmesan cheese. 5. This looks much tastier. I never count calories during that time of the year.
