Comfort Food- Mac N Cheese

This is my recipe that I've developed to take to family pitch-ins---I

can eat it & they don't find any " weird " ingredients in it. I make it

whenever I feel under the weather too. Talk about a million

calories--lol!

 

ANN'S MACARONI AND CHEESE

1 (16 ounce) package elbow macaroni

12 oz can evaporated milk

2 eggs (I use 1/2 cup egg substitute)

2 cups sour cream

2 teaspoons salt

3 cups shredded mild Cheddar cheese

2 cups cubed Velveeta

1 cup shredded Parmesan cheese

 

1. Preheat oven to 350 degrees. Spray 9x13 pan with nonstick cooking

spray.

2. Bring a large pot of salted water to a boil. Add pasta and cook

for 8 to 10 minutes; drain and rinse with cold water.

3. In a very large bowl, mix milk, eggs, sour cream, and salt. Stir

in macaroni and then add Cheddar cheese and Velveeta.

4. Pour into pan. Sprinkle with Parmesan cheese.

5. Bake in a preheated oven for 20 to 30 minutes or until milk and

cheese mixture is done.

Thanks for sending this recipe in. I will make it during the

holidays. I'm not happy with my recipe. This looks much tastier.

I never count calories during that time of the year. I go right into

comfort zone lol
