I've never tried to make it myself but I do love it! Of course, I'm trying to cut down on dairy and eggs (both of which I think are in there). My other Sabbath meal was walnut patties made using my Grandmother's recipe. I haven't had it in awhile...thanks for helping me remember. I'll make it next week. It too goes against my fewer eggs and dairy but I'd count it as a comfort food. I have a special k loaf recipe but it FULL of eggs and I would like to find one without so many. Would also be interested in trying a walnut pattie. I'll look and if not I'll post my Grandmother's recipe as she wrote it out for me. I sometimes make small adjustments (e.g., adding garlic because I adore garlic). If you find a Special K loaf without too many eggs I'd love to see it. Guest guest Posted September 25, 2008 Report Share Posted September 25, 2008 For the special K loaf: I substitute mashed tofu for the cottage cheese and ground flax seed for the eggs. It doesnt hold together quite as well as does with eggs but still tastes good. I still need to work on it a little to find the right combo to get it to stay together.
