Guest guest Posted September 25, 2008 Report Share Posted September 25, 2008 Bipolar baked Butternut squash 3-4 small or medium butternut squash 1 can or equivalent canellini beans (or any white beans), olive oil, salt, freshly ground black pepper, minced parsley for the top. Butter, brown sugar, cinnamon, grated nutmeg, salt Bake butternut squash at 350F by slicing it open, seeding it and placing it cut side down in oiled baking pan. When they offer no resistance to the fork test place half of the squash on each side of a divided casserole. Lightly salt all the pieces. On one side of casserole, drizzle some olive oil on cut squash, fill cavity with the white beans and add some freshly ground black pepper, and more olive oil if desired. On the other side, sprinkle brown sugar, cinnamon, nutmeg and butter on squash. Place squash under broiler just long enough for it to be toasted on top and for the butter to melt.
