Looking for your favorite Eggplant recipes...

My veggie neighbor & I are always trying new eggplant recipes. (well, I make

them, we all offer opinions) and we all agree that the eggplant relish is

beyond compare. It calls for pine nuts and capers, I don't know if those qualify

as exotic. It is super easy though. Amy
