I brown vericelli  with onions and garlic and then add rice and broth and cook

in the rice cooker.  It is delicious.

give it a try.  When it's done sprinkle some toasted pinenuts on top or toasted

sesame seens. Or a spoonful of hemp nut seeds.  This is pure bliss!

I had heard about browning your pasta before use. It adds a deeper nuttier

flavor to your recepies.

Sopa Seca De Fideo (Dry Soup)

 

8 ounces vermicelli

3 tablespoons butter

1 small onion, chopped

1/2 green pepper, seeded, chopped

1 garlic clove, minced

1/2 teaspoon cumin

2 cups broth

1 tomato, seeded, chopped

Parmesan cheese

Sour cream

 

Brown the vermicelli (broken into short lengths) in butter over medium heat,

stirring constantly -- careful, it browns fast. Remove pasta, add onion,

green pepper, and garlic. Cook until onion is soft. Add vermicelli, cumin,

and broth. Cover and cook over low heat until liquid is absorbed. Stir in

tomato.

Serve topped with sour cream and Parmesan cheese.

Sounds great. I had forgotten about the browning of the rice in a skillet

prior to cooking, and the nutty taste it gives it. I'll have to try this next

time I makes some. You're singing my song with onions and garlic. LOL I just

used my last onion today, I must get some Sunday.
