Question of the Week:

What are foods and recipes that you associate with fall and why?

 

 

Fall is such a beautiful time of the year. Time for picnics in parks,

camping and drives to see fall colors. Time for cosy evenings with a

campfire or fire in the fireplace. Time to harvest, decorate with fall

items. Cook and bake favorite recipes. Time for sports. Raking leaves

while the crockpots simmers with wonderful smells.

 

Please share your favorite reasons you love this season, your memories and

traditions, recipes and foods that you associate with all of this.

 

I'm glad so many take the time to share with the questions of the weeks. It

starts many wonderful discussions and gives us all great idea.

I just love anything pumpkin! Pumpkin bread, muffins, dip, pie, cake, cookies,

pancakes, etc.  I would love some great new recipe ideas.

Pumpkin. It's almost time for me to start making pumpkin breads.

Squash, reminds me of Thanksgiving.

The dried corns to sit in bowls as a decoration.

Hmm anything with pumpkin or other squashes - oh and a classic being a jacket

potato baked, the flesh scooped out, a nice sharp cheddar mixed in and then

piled back in the skins (possibly with some tabasco if wanted) and then back in

the oven for 10 minutes just to get all the cheese to melt into the potato (hmmm

I wonder if I can get Mark to do this tomorrow for lunch!)

Pumpkin pie, the smell of the spices that you use when baking, definitely the

Cranberry Bread that I used to make every year for Thanksgiving. I'll dig up

that recipe and post it later on when I get a free minute or three.

This is truly my favorite time of year.? If only it wasn't followed by winter.?

Some of my fall favorites are crisp apples right off the trees from the local

orchard (and all the wonderful things you can make with them), pumpkins, acorn

squash, thick hearty soups like lentil and split pea with crunchy whole grain

bread slathered with REAL butter and?baked beans.

 

One of the things I miss the most is that we have been unable to burn leaves for

many years.? Now people stuff those dopey pumpkin leaf bags and have them

hanging around until April.? LOL? While I understand the reasoning, autumn just

isn't autumn to me?without the smell of burning leaves.

haha, I don't bake, but I put pumpkin pie spice and cardamom and cinnamon in my

potpourri pot in the fall and winter.

Pumpkin pie, the smell of the spices that you use when baking, definitely the

Cranberry Bread that I used to make every year for Thanksgiving. I'll dig up

I realize we're talking autumn and not winter, but cooler weather is

always a harbinger of Christmas, and thus reminds me of traditions

connected with that. Growing up we always served chili on Christmas

eve (and oyster stew - yuck!), so chili will always enjoy a special

place in my heart. It also goes GREAT with football on TV, another

autumn tie-in. My g-parents were huge Nebraska Cornhusker fans, and,

as a result so am I (although the past few years have been a little

ugly). I am also an alumnus of Nebraska and of the marching band.

 

With all the sentiment I associate with my favorite soup, I thought I

would present this recipe for veggie chili, which I plucked off the

Meatless Monday website. Perhaps it's already in the files, but it's

so good and easy, it deserves an encore.

Beany Red Wine Chili

Maria Comboy, Jefferson, LA

Serves 6

 

Ingredients

1 large onion, chopped

3 cloves garlic, chopped

1 bell pepper, chopped

2 tbsp olive oil

1 can black beans, drained

1 can navy beans, drained

1 can pinto beans, drained

1 can red kidney beans, drained

1 can garbanzo beans, drained

1 16-oz can diced tomatoes

1 8-oz can tomato sauce

1 small can (4 oz) green chiles

3 tsp chili powder

1 tsp cumin

1 tsp basil

Salt & pepper to taste

1/4 cup dry red wine (optional)

 

Directions

Saute onion, garlic, and bell pepper in olive oil until soft. Add

remaining ingredients. Bring to a boil, lower heat, and simmer for 20-

30 minutes.

 

Serve with shredded cheddar cheese and sour cream if desired.

 

Nutrition Information per Serving

Calories 430, Total Fat 7g, Saturated Fat 0g, Cholesterol 0mg, Sodium

1540mg, Carbohydrate 69g, Fiber 21g, Protein 23g

I step out my door and pecans hit me on the head...literally....so I

guess....pecans? (squirrels take one bite and toss the rest down, I

doubt I will get many pecans to eat)

 

I also have several butternut squash and some acorn squashes

curing...I don't much care for pumpkins, but butternut squash is yummy!

 

Also the scent of cinnamon and nutmeg.

I always think of Golden Delicious apples and fresh cider from an

orchard nearby. This is a recipe I recently was given and I've made

with blackberries instead of blueberries (I just happened to have

them) and I hope to make again for the holidays.) N0TE: Since the

author that she always doubles the recipes the amount of an ingredient

is given first for the 4 loaves recipe; the amount for the 8 loaves

recipe is in the parentheses.

 

Berry Loaves

 

1/2 (1)cup margarine, softened

1 (2)cups sugar

2 (4)eggs

3 (6)cups all-purpose flour

1 (2)teaspoons baking soda

1 (2)teaspoons baking powder

1 (2)teaspoons salt

1 (2)cups buttermilk

1 (2)cups whole berry cranberry sauce

1 (2)cups fresh or frozen blueberries

 

(I always double this recipe because then I use the entire can of

cranberry sauce.)

 

Cream butter and sugar until light and fluffy. Add the eggs, one at a

time beating well after each. Combine the dry ingredients then add

alternatively with buttermilk. Stir in cranberry sauce and

blueberries. Pour into greased loaf pans, or any decorative pans.

Leave room for mixture to rise.

 

Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted

in the center comes out clean. Cool slightly before removing from

pans. Makes 4 small loaves. (Double recipe makes 8 small loaves.)

Yams, apple cider, hot chocolate, and of course anything made with

pumpkin or just having a nice pumpkin sitting around the living room

ringing in autumn.
