Guest guest Posted September 30, 2008 Report Share Posted September 30, 2008 Hot Gingered Tomatoes 1 tbsp. toasted sesame oil 1 cup sliced shiitake mushrooms 1 bunch scallions, sliced, with green tops 1/4 cup freshly grated ginger 1 tbsp. tamari 1 tbsp. honey 2 tsps. arrowroot 1/2 to 1 cup water 2 medium tomatoes, cut into quarters Heat oil in medium skillet and saut?ushrooms, scallions, and ginger until mushrooms are limp. Stir in tamari and honey. Dissolve arrowroot in water and add to skillet, mixing well. Cook for about 2 minutes, or until thick and bubbly. Add water as needed. Guest guest Posted September 30, 2008 Report Share Posted September 30, 2008 My recipe is lightly different from the one posted: Tom Hot Gingered Tomatoes 1 tblsp. toasted sesame oil 1 cup sliced mushrooms (Shitake, or Button, or Hiitake, or Maitake or Oyster, Hen-of-the-Woods, or Enoki. 1 bunch scallions, sliced, with green tops 1/4 cup freshly grated ginger 1 tblsp. soy sauce - (or teriyaki sauce) 1 tblsp. honey 1 jalapeno or any other hot pepper, sliced thin 2 tsps. arrowroot (or corn starch) dissolved in 1 C - H2O 1 cup cool water for above 2 tomatoes, cut into quarters or smaller Dissolve arrowroot in cold water. Heat oil in medium skillet and saute mushrooms, jalapeno, scallions, and ginger until mushrooms are limp. Stir in soy sauce and honey. Add arrowroot in cold water to skillet, mixing well. Cook for about 2 minutes, or until thick and bubbly. Add water if needed. Add tomatoes and stir carefully, cooking until just done and well coated with hot sweet glaze. Serves 4.
