i just joined the group. i look forward to learning new meatless

recipes, and all vegetables/fruits/ grains/legumes in new ways and

combos than i have been. i have a recipe to share, i don't know if

you'll like it or not, but i do. it is from india, and it is called

chickpea salad. i guess it is served as a snack throughout india, and

this is the simplest version of their favorite. this recipe comes

from World of the East Vegetarian Cooking cookbook.

2 20 ounce cans chickpeas,or 4 1/2 cups homecooked chickpeas and

their cooking liquid

6 scallions, trimmed and finely sliced halfway up their green sections

2 tablespoons lemon juice

3/4 to 1 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 tablespoons minced Chinese (or other) parsley

1/4 teaspoon cayenne pepper

 

pour contents of chickpea cans or homecooked chickpeas into saucepan.

bring to a boil. drain, discarding liquid. in a serving bowl, combine

chickpeas with all other ingredients. mix well and set aside,

unrefrigerated for 1 hour. mix again.serve cold or room temp. serves

4 to 6
