I need a variety of lunch and snack ideas that do not become repeatative for her. (Please remember there are no microwaves in middle school). Also, this will be my first veggie thanksgiving. Guest guest Posted October 4, 2008 Report Share Posted October 4, 2008 I recently attended a vegetarian lunch box cooking class and received recipes for mock chicken salad, eggless salad filler, simple slaw, oriental chicken salad, sicialian pasta salad, chocolaty brownies, and peanut butter cups. They also shared some recipes which would need to be heated. You are so lucky that your child is willing to try this way of life, mine won't! Let me know if you are interested in these recipes. She can dip the crackers in the peanut butter. It is so much better to her than a sandwich, and so many crackers equals so many pieces of bread, I forget the amount. Then I pack her some strawberries or apple slices. I am guilty of giving her confectioners sugar with the strawberries. <hangs head> Vegetable soup in a thermos, she likes this too. Cereal in a baggy with milk of your choice in a thermos, just pack a plastic bowl in the lunch bag. raw veggies and dip. My kid won't eat that, but maybe yours will? She will eat carrot pieces, but you know what, scratch that idea, that scares me, if they are laughing with friends and choke, I am so choke paranoid. I guess all moms have some kind of paranoia right? LOL How is your 11 year old with cheese sandwiches? Mine won't, but some of her friends will. You could be like my Mom and completely restrict her sugar, and then she will get hold of it anyway and crave it the rest of her life like I do. I am fortunate that my parents were not food nazis, and I like everything.
