Your prayers and support have helped me to improved my health, my yoga, and my overall joyfulness. Thank-you, one and all. +++++++++++++++ Chow Mein This a veggie adaptation of a recipe from my great aunt, who will turn 101 on Pearl Harbor day. Kids seem to dig it. 4 medium carrots, peeled and sliced into 1/4-inch thick rounds 2 celery stalks, chopped 2 T olive oil 8 oz Boca meatless ground burger 1 c white minute rice 1 pkg onion soup mix 6.5 oz canned mushrooms, undrained 3-4 cups water and/or veggie broth onion slices, to taste chow mein noodles soy sauce In a large skillet, saute the carrots and celery in olive oil until tender. Stir in burger, rice, soup mix, mushrooms, and broth. Bring to boil. Reduce heat, place onion slices on top of mixture, cover and simmer for 20 minutes or until rice is tender. Enjoy over chow mein noodles with soy sauce. (The original recipe calls for 1/2 c chopped green bell pepper, which I omit.) +++++++++++++++ Can anyone suggest substitutions for onion soup mix and chow mein noodles? I am working toward veganism, and the noodles have milk as an ingredient. (In the limit, the dish works OK as a standalone.) The soup mix is full of unpronounceable nasties; I am concerned that they would be objectionable to my veggie sensibilities, if I knew their origins. Namaste, Padmasanadave.
