Both my husband and I are in our 60's and both are overweight. We have tried eating vegetarian in the past but have never really gotten into it. I am hoping that with the help of this group we can learn how to eat this way and I can learn how to cook as a vegetarian. (My husband always says that when it is his turn to cook all he can make are reservations!) [)] Any way, I am hoping for some clues on how to start out and maybe find some meal plans to follow for a while. I grow a lot of our vegetables and fruit so now I just have to learn how to use them as the main ingredient, instead of just a side dish or condiment. Thanks is advance for any help you can offer. Guest guest Posted October 8, 2008 Report Share Posted October 8, 2008 I am late at checking my mail, obviously Casseroles have really given me some creativity in the kitchen, as well as allowed me to get my maximum nutritional benefit by incorporating multiple foods in a " main dish " . When I began this vegetarian journey , almost 1 year ago, I knew that if I replaced all the animals I ate with carbs, then my weight loss would not happen. Spinach dip was my savior! I ate it with carrot slices and broccoli florets. That got me through the " I don't know what to make " times. I try to make it every other week. Stir fry is great and easy. Put on top of rice or quinoa. Recently I have gotten more interested in " stuffed " veggies. I made stuffed tomatoes last night. Next week I plan to make stuffed zucchinni. Stuffed peppers are a big favorite of mine as well. The stuffed tomatoe recipe is n the files- Pesto stuffed, I think... I am going to stuff the zuc with bread crumbs, diced tomatoes, onions, and top with spag sauce. The green peppers I stuff with our own " dirty rice " (bag of beans and rice, cooked, canned diced tomatoes, 1 bag of tofu crumbles, frozen carrots and peas- 2 handfuls of each) We eat the " dirty rice " as an entree, as well. It is my husband's favorite dish, and mine, too, as it is super easy. Best of luck on this journey to healthy living.
