Guest guest Posted October 4, 2008 Report Share Posted October 4, 2008 1 pkg cheese tortellini (I use 19 ounce frozen) 2 cans vegetable broth 2 cloves garlic minced 1/2 teaspoon salt 1 c fresh chopped spinach 1 can diced tomatoes in juice 1/3 cup sliced green onions parmesan cheese—I never measure, I just sprinkle some over each bowl when I serve 1. Cook tortellini in broth for the time recommended time on the package. 2. Add remaining ingredients and simmer for 15 min. 3. Sprinkle with parmesan when served.
