Question on Making Cream Soups

Hi everyone,

I want to try making some cream soups (cream of potato, etc.). I have

a couple of recipes I found online which use regular dairy milk. If I

were to sub this with soy milk, would I use the amount or would I need

to adjust it? Would I need to add more flour to make it thicker??

I use soymilk all the time for my " cream of " soups....

 

The biggest issue is....you need not only " plain " but unsweetened soymilk,

or the soup may not come out as you expect.

 

I make my own soymilk, so that's not a problem for me....

 

Last I checked, the only plain unsweetened I found was Westsoy in an

aeseptic box, but it was years ago that I checked. There may be others now,

or even that one might be gone.

 

And my soymilk " cream of " soups have fooled even those who " don't like

soymilk " ....grin...!

Silk makes a nice thick soy creamer that works in creamed soups.

There are good soy milk techniques on YouTube. Just doa a search on how to make

soy milk. There are lots of resourceful videos about soy, some of which are

connected to reputable vegetarian cooking websites!
