soup..It's cooking on the stove now so I thought I would share my

*recipe*

 

 

1 medium Crookneck Squash peeled, seeded, diced

1 medium yellow squash unpeeled,diced

2 medium tomatoes , peeled and diced

1 med. carrot thinly sliced

1 med. onion , diced

4 cloves of garlic, diced

1 med. Fuji apple, peeled, cored,diced

sea salt and white pepper to taste

 

Simmer all veggies until tender. Cool,then puree in blender or food

processor.

Optional: Add enough liquid such as your favorite broth, milk, etc to

desired consistancy.

To serve, heat but do not boil.

Garnish with a dollop of sour cream and chopped fresh chives.

 

Note : Any type of squash, apples, etc. will work. I just like the

combined flavor of this particular group.

This soup is also great slightly sweetened and spiced with cinnamon

and nutmeg.

If you prefer not to puree, this soup is also great with veggies left

in pieces.
