Here are some of the recipes I received at the cooking class....enjoy!

 

 

Simple Slaw

 

1/2 large head of cabbage, shredded

2-3 green salad onions, sliced

1 large carrot, shredded

1 cup vegenaise or mayo

1 tsp. onion powder

1/2 tsp. garlic powder

 

Stir well, add salt if needed.

 

 

 

 

Eggless Salad Sandwich Filler

 

4 cups tofu, mashed

1 1/2 tsp. salt

2 1/4 tsp. onion powder

1/2 tsp. garlic powder

2 Tbs. chicken style seasoning

 

Mix well, then add:

 

1/4 cup minced onion

1/2 cup minced celery

1 1/2 cups mayo or vegenaise

 

* May add tumeric for yellow color if desired

 

 

 

 

Peanut Butter Cups

 

3/4 cup natural peanut butter

1 cup soy milk powder

 

mix and form into small balls

 

1 cup sweetened carob chips

1/2 cup natural peanut butter

 

Microwave on high 1-2 minutes. Stir well. Spoon a small amount into bottom of

mini muffin

paper cups. Place one of the peanut butter balls in the carob and cover with

more melted carob.  Freeze.

 

 

 

Mock Chicken Salad

 

3 cups basic sauce (recipe to follow)

1 1/4 cups TVP

1/2 cup sweet pickles (diced)

6 tsp. minced onion

3/4 tsp. ground celery seed

 

Stir well and let sit until TVP is tender.

 

 

 

Basic Sauce

 

2 cups water

1/2 cup oil

1 cup soy milk powder

1 tbs. onion powder

1/2 tbs. salt

2 tbs. lemon juice

 

Blend all ingredients on high 2 minutes.
