My kids love pasta salad, it is very versatile and easy to make. I like to use this a basic guide, but it is fun to expirement: 1 box tri-colored cooked 1 bag frozen mixed vegatables 1 can black beans drained (14 oz) 1 cup balsamic vinagrette 2 TBS Itallian Seasonings Sea Salt & Freshly cracked pepper to taste Place the beans and mixed vegetables in a colander in the sink. Cook the pasta and drain over the beans and vegetables Toss in a bowl with the remaining ingredients You can chill it, but I love to eat mine right after I make it Each of the kids get to make the pasta salad in turns, they choose the vegetables, beans and dressings. It makes it " their " recipe and they are so proud of what they have done, that they share it with friends and others around. I would encourage you to let her make some of her meals or choose the ingredients for things like her sandwiches and wraps. My youngest is 9 and he makes his " recipes " for the family all the time, and I sometimes find him sharing his " secrets " with others. We also enjoy rice and noodle dishes, I would encourage you to look in the archives for some suggestions. Coupled with fruit or maybe a veggie wrap, they are filling and really good. I wish you all the best, it sounds like you have a wonderful inciteful child, if you can manage to get her hands-on with her dietary choices now, it will help foster a love of healthy eating forever.
