Vegan fried rice 1 block of firm tofu (If you aren't vegan, you can substitute 3 scrambled eggs made with the soyu and sugar mixed in.) 1 tbsp sugar 3 tbsp of soyu Squish the tofu with your hands to a cottage cheese consistancy, then add the sugar and soyu. Put it in a non-stick pan on High to medium high and watch it carefully, stirring occasionally, while you are preparing the rest of the ingredients. The goal is to cook off most of the water and get a delightful soft crust on the bottom. This happens when most of the water is gone., maybe 10 minutes or so. Stir the crust in, then let it happen again, until it is looking like dry scrabbled eggs. Fine dice: 1/4 to 1/2 of any or all of the following. * carrot * cabbage * broccoli * red, green, yellow, whatever color pepper * peas * green beans * celery * other left over veggies that don't have too strong a flavor. Medium dice: * 1/2 of a medium size onion * 1 or 2 cloves of garlic Diagonal cut: * 2 or 3 green onion, set aside for garnish. 2 cups of yesterday's leftover white or brown rice (if you use today's it will be gummy). Break it up with your hands so each grain is separate. 1 tbsp sesame oil 1 tsp ground ginger (can easily omit) 2-3 tbsp peanut oil. Can use other oils but they burn easier. Another 1/4 cup soyu Directions: Heat the wok till the oil just begins to smoke. Stir fry onion until becoming translucent. Add garlic, stir fry another minute. Add " hard " vegetables like carrot, celery, fresh green bean and stir fry for 2 min, adding a little water if starts to stick. Add soft veggies like cabbage, broccoli, peas or cooked green beans or corn. Cook it until when you taste it, it is crisp yet tender. Check often, add a little water if needed, but it needs to be fairly dry for the next step. Add the sesame oil. Stir in the tofu mixture. Stir in the rice Stir fry until rice is nice and hot, sprinkling the whole mixture with the 1/4 cup soyu, more if you like. Sprinkle the sliced green onion on top Enjoy!
