Guest guest Posted October 8, 2008 Report Share Posted October 8, 2008 Potato Frittata with Sage and Onions 2 medium potatoes, cubed and steamed 1 medium onion, chopped 1 tsp. dried sage 4 eggs, beaten freshly grated Parmesan cheese Preheat the oven to 350 degrees. Arrange potatoes in a 9-inch pie plate, along with onion and sage. Pour in eggs and bake in the middle of the oven until set, about 20 minutes.. Immediately sprinkle on Parmesan.
