Hello Diane Self Frosting Pineapple-Coconut Cake

It turned out so great! I had to bake it a little longer than the

recipe said but my oven is not accurate at all so I'm sure that was

why. I took the cake to work to celebrate our 1 year anniversary with

the 3 others who were in my training group so each of us got a quarter

of an 8x8 pan. That meant pretty big pieces which they shared with

others. Still I had ppl coming up all day asking if there was more

cake and I got 'orders' to bring said cake to the next potluck LOL.

Lawanda, your aunty picked a great recipe! Plus it bakes up just

gorgeous - golden brown with toasted coconut & chopped nuts on top -

so pretty.

 

The only thing I'm worried about now is doubling the recipe. Can I

straight out double it or do I need to adjust? I'm hoping a double

recipe will work in a 13 x 9 glass pan. That's the experiment this

weekend. DH has bravely offered to eat the results. He's noble that

way
