I do read the groups posts daily. That's where I have been since this afternoon. BUT, over at Recipezaar they've just had this quickfire type recipe creating contest & I came up with a yummy one: Curried Squashy Apples & Leeks By: Elmotoo Oct 10, 2008 The title sums it all up. A lovely autumnal side dish that is very easy, delicious & healthy. A crock pot recipe that doesn't take all day! **I used frozen squash which worked great. Please note that whichever brand I used - it may or may not hold true for all brands - the dice was small. The apples need to be about the same size as the squash. Fresh squash probably will be ready quicker. SERVES 4 -6 (change servings and units) Ingredients 2 tablespoons butter 2 cups leeks, chopped 3 cups apples, peeled, cored & diced small 1 lb butternut squash, diced small (fresh or frozen) 1 cup apple cider 2 tablespoons curry powder salt & pepper Directions In a small pan, saute leeks in butter until softened then add to crockpot. Add remaining ingredients to crockpot & stir. Cook 1 1/2 - 2 hours on high until bubbly & the apples are softened. Taste to check for seasoning. Add salt & pepper to taste. We made 6 dishes for our vegetarian potluck at church yesterday. We made from our steamed fried okra, Meatos, Gluten slices that we breaded in Italian bread crumbs and fried, twice baked potatoes, hot cheese olive puffs, and banana bread. Guest guest Posted October 12, 2008 Report Share Posted October 12, 2008 Ive been busy working nights and homeschooling my 3 kids during the day. I was ahead of schedule this week and got my cooking for church dont on Thursday so I wasnt so rushed to get it done on Friday. I also teach childrens Sabbath school, so I have to prepare for that every week. This week for potluck I made a crockpot of butter beans and a vegan caramel apple tart. It was very yummy. My mother has recently been diagnosed with lung cancer and a brain tumor so I'm just trying to keep it together. However, in spite of difficulties, I'm here, but more for the reading and mini breaks my computer gives me. I'm sorry I'm not posting much but do care and greatly appreciate those who generously share their time and expertise so some of us can improve our diets and lives! My family is currently going thru a similar situation. My brother in law was diagnosed with stage four colon cancer With an inoperable liver tumor.
