Hey Everyone, the group is quiet. Is everyone busy? I haven't posted

in a long time.

I will dig up a good recipe for the group. I haven't been cooking too

much from scratch either.

Been busy on this end. Voluynteering at the local charity thrify shop,

watching the debates on TV, and helping with homework.

I do read the groups posts daily. I never miss those, and I also print

out recipes,I need to make more of them soon

My Internet has been down in my area so I watched some Cold Case Files and they

gave me the creeps, I ended up watching foreign movies and doing speed reading

with the subtitles. That's where I have been since this afternoon.

I was going to bake biscotti but tomorrow is another day and I already ate up

the dried cherries for my recipe lol

BUSYBUSYBUSY.  And when I'm not BUSY, I'm sleeping!  BUT, over at

Recipezaar they've just had this quickfire type recipe creating contest & I came

up with a yummy one:

 

 

Curried Squashy Apples & Leeks

By: Elmotoo

Oct 10, 2008

The title sums it all up. A lovely autumnal side dish that is very easy,

delicious & healthy. A crock pot recipe that doesn't take all day! **I used

frozen squash which worked great. Please note that whichever brand I used - it

may or may not hold true for all brands - the dice was small. The apples need to

be about the same size as the squash. Fresh squash probably will be ready

quicker.

SERVES 4 -6 (change servings and units)

 

Ingredients

 

 

2 tablespoons butter

2 cups leeks, chopped

3 cups apples, peeled, cored & diced small

1 lb butternut squash, diced small (fresh or frozen)

1 cup apple cider

2 tablespoons curry powder

salt & pepper

Directions

 

 

In a small pan, saute leeks in butter until softened then add to crockpot.

 

Add remaining ingredients to crockpot & stir.

 

Cook 1 1/2 - 2 hours on high until bubbly & the apples are softened.

 

Taste to check for seasoning. Add salt & pepper to taste.

i've been busy canning/preserving pears....they' re everywhere and i

probably have about 200lbs. to go.ggggrrrrrrr. ..but will be glad for

them this winter.

Busy with kids, animals & church, exercise, stuff around the house & yard,

putting out winter rye grass seed in our pasture and lots more. We made 6

dishes for our vegetarian potluck at church yesterday.

We made from our steamed fried okra, Meatos, Gluten slices that we breaded in

Italian bread crumbs and fried, twice baked potatoes, hot cheese olive puffs,

and banana bread.

 

Great to hear from so many.

I've been running around finding supplies with my friends for some

holiday arts and crafts.

Not really sure what we want to make up for gifts this year.

Maybe some jar mixes. Like bean soups, or cookie mixes.

Ive been busy working nights and homeschooling my 3 kids during the

day. I was ahead of schedule this week and got my cooking for church

dont on Thursday so I wasnt so rushed to get it done on Friday. I also

teach childrens Sabbath school, so I have to prepare for that every

week. This week for potluck I made a crockpot of butter beans and a

vegan caramel apple tart. It was very yummy. I will try to get the

recipe for this posted in the next couple of days.

I've been home, stressing out quite a bit these days.  My mother has recently

been diagnosed with lung cancer and a brain tumor so I'm just trying to keep it

together.  I always enjoy reading everyone's emails and recipes even though I

haven't cooked much lately.

I am terribly sorry for your mother's diagnosis. I know you have to be

stressing. Can you cook up some of your comfort foods. My prayers are with

your mother and with you during this time.

good grief!  and how do you preserve them?  i have about 50 pounds left after

shoving them on everybody's laps but have never done preserving before... gloria

Thanks everyone, I appreciate your thoughts and prayers very much.  I do plan on

making my mom some of her favorite comfort foods when I go home to visit.  She

likes soups and chilli so I can easily make those vegetarian which is good since

I don't really know how to cook meat.

he might heal without more surgeries and no insurance.

 

However, in spite of difficulties, I'm here, but more for the reading

and mini breaks my computer gives me. I'm sorry I'm not posting much

but do care and greatly appreciate those who generously share their

time and expertise so some of us can improve our diets and lives!

Jessie,  I am new in this group and have never communicated with you before, but

I wanted to tell you that I will be praying for you, your mother and your

family.  My family is currently going thru a similar situation.  My brother in

law was diagnosed with stage four colon cancer With an inoperable liver tumor. 

If you need anything that I can do long distance, plkease don't hesitate. 

Remember that God is good - even when we don't understand!
